How to gain the skill to cook without looking at recipes

There is one thing my mom always tells me.


"Cook by yourself. Don't eat lousy stuff."


She completely believes cooking by ourselves is key to health and longevity.


She has been helping senior people for more than 30 years.


“Most of the senior people who are healthy and active cook their own meal,” my mom says quite often.


I think this is true.



Because home food is always healthier than outside food. We don’t put so much sugar, salt, and oil when we cook at home. And also, cooking trains our mind and body. We have to think about what to eat and how to cook. We also have to go shopping.


But in reality, not everybody cooks regularly. Even some of my friends don’t cook.


If you have a big family to take care of, or if you are super busy with work, cooking is troublesome. Of course, you don’t have to cook all the meals every time.


But when cooking is fun, we love it more and we do it more.



Cooking feels much easier when we can cook without looking at recipes.



Cooking expert Yoko Arimoto says in her book “when you rely on recipes, you follow exactly what the recipe says such as how many grams, or how many minutes, … and we don’t use our sense. In addition, to measure weight or time to cook is not fun for human beings.” I cannot agree more.


The following are her tips to cook without looking at recipes.


1. Try. Don’t be afraid to fail.

2. Imagine what you want to eat. Do you want to make it crispy or do you want to make it colorful? etc...

3. Think about a texture first (firm or soft) instead of taste.

4. Taste several times before you complete it.


If I add on this,

1. Don’t cook complicated dishes

2. If you want to cook complicated dishes, you may want to look at the recipe first. Then you cook the same dish again and again until it becomes yours.


Home cooking should be more fun.


“When you continue to practice cooking without looking at recipes, you will improve your cooking sense. You will acquire the basics of cooking in a true sense…. You will enjoy cooking more,” Arimoto says.
